Calabacitas



Serves 6

4 medium green zucchini, cubed
3 Tablespoons shortening (or olive oil)
1 clove garlic, minced
1 Tablespoon onion, chopped (I use a lot more than this)
2 green chiles, chopped
1 small can whole corn, drained or 2-3 cobs
1 cup milk (optional)
salt, to taste

Melt shortening, saute squash, onion, green chile and garlic until tender. Add corn and milk and simmer for 15 min
